We are beyond excited to announce that Michelin-Star Chef Miller Prada from London’s acclaimed HUMO Restaurant will be in the Pincho Disco kitchen for 2 nights only, with a sensational menu featuring the HUMO classics made famous in his award winning restaurant.

A childhood friend of our Pincho Disco Head Chef Diego, Chef Miller 6-course tasting menu draws on inspiration from his Colombian heritage.

After the dining experience, join us at the Pincho Bar where live entertainment will set the scene for some celebratory drinks.

Citrus sauce and Castillo coffee from Miller’s family farm in Colombia

Garden Salad
Smoked potato, rocket, baby turnip, coriander, Rokko miso

Flatbread
Prawn, shallot ash, beef fat, nixtamalized corn, brain emulsion, ginger

Scallop
White nectarine, whiskey barrel, 18 year oak aged whiskey sabayon

Lamb
Aged lamb rack, beetroot sauce, sweet onion chutney, radicchio, citrus

Koji
Custard sponge cake, white oak, Castillo coffee, Koji, buckwheat, lemon leaf

ABOUT CHEF MILLER PRADA

Raised in Bogotá, Colombia, Chef Miller’s culinary journey began at home when he was quite young. His early love for cooking has led him on a global adventure, from the dynamic kitchens of Sydney and Hong Kong to the cultural crossroads of Lima, where he discovered a deep connection to Japanese Nikkei cuisine.

After honing his craft with some of the world’s top chefs in London, Miller’s vision was brought to life with HUMO, a Michelin Star restaurant that masterfully blends live fire cooking with his Colombian heritage.
